Use as much or as little chilli as you wish but trust me, a little kick is what makes this dish. Ingredients 30g brown rice (cooked according to pack instructions) 1 salmon fillet 75g sugar snap peas ¼ Red pepper and ½ carrot (cut into matchsticks) 2 tbsp Light Soy Sauce ½ tspn garlic paste (for ease) or 1 clove of garlic (crushed) ½ tspn ginger paste (for ease) or 1cm root (grated) 2 red chilli (chopped) Munchy seeds Serves 1 Speedy Winter Warmer Salmon Method Put the rice on to boil, when almost done add the carrot matchsticks and sugar snap peas. Mix the soy sauce, garlic, ginger and 1 chilli together and set aside. Use spray coconut oil and pan cook the salmon flaking it as it cooks. (Remove the skin). After 2 minutes add the red pepper matchsticks. Cook for a further 2 minutes. By now, your salmon should be almost cooked. Pour on the soy sauce, garlic, ginger and chilli mix and reduce heat for 1-2 minutes. Strain the rice, carrots and peas and combine with the salmon mix. Serve and top with the remaining sliced chilli and your favourite munchy seeds. Enjoy hot or leave to cool.
