ForEliteAtheletes toFunRunners 22 obstaclemudrunner.co.uk no method required HEALTH : RECIPE Recipe Ingredients SALAD Handful of spinach Half handful of pea shoots Half handful of rocket 2 cherry tomatoes, quartered 4 thick slices of cucumber, quartered Red onion rings, as required Half an avocado, cubed 1 hard boiled egg, quartered A sprinkle of your favourite seeds (many varieties are available from your supermarket in a handy pot) DRESSING 1 tablespoon extra virgin olive oil A generous twist of black pepper Juice of half a lime 1 or 2 chopped basil leaves or favourite herb of your choice Serves 1 Simple tasty egg salad Method SALAD There is no real method to this recipe, just pop it all in a large bowl and dress. DRESSING Mix together!!!! TOP TIP Boil extra eggs and make double quantity dressing and it’s all ready for another day. Both will keep in the refrigerator for 24 – 48 hours.
